If you want to put an apple in the pig's mouth, place a block of wood in the mouth during cooking. Remove the block of wood at serving time and replace with the apple. Many people prefer using rubs. This is done on the inside of the carcass. After taking the pig off the grill, give it time to rest. It’s still cooking (the skin will keep it warm and lock in your juices).
